I have one, not necessarily dairy, but I usually make it dairy...

saute a bunch of scallions and a few onions at bottom of pot in butter
fill up 3/4 of the pot with cut up potatoes (I usually throw in one or two sweet potatoes as well).
fill up mostly with water and let it boil.
let it simmer until potatoes are soft, while simmering add in a couple teaspoons of pareve chicken soup mix (to taste) as well as salt n pepper to taste.
when potatoes are all soft, let cool and use an immersion blender.
u might have to add water after, depending on how thinkyou want it.
