Any olive salad recipes?

Does anyone have any olive salad recipes? It can be for olive spread or for whole olives. I would really like to know how to make olives in tomato sauce the sephardi style.

1 can israeli olives-pitted(drain)
a few tsp of minced garlic from a jar(including a bit of the oil)
1 onion minced(small)'1/2 large onion minced
1 small can tomato paste

heat a bit of oil in frying pan on med high heat,add garlic and onion till you can smell it,add olives.continue to cook until u can smell the olives cooking,add tomato paste,and turn heat low/simmer cover and cook for about 2--30 mins.

This is an extremely easy and delish olive dip.

2 cups green pitted olives (with the pimentos- aalthough I sometimes do without)
1 cup mayonnaise
4 cloves garlic
1 tsp. black pepper (I sometimes use 1/2)

Put it all into the food processor and chop on high about one minute or until piecey (not creamy).
Holds well in the fridge, although we never get to that stage, a double recipe goes every shabbos.

Green Olive Dip:
mayo
green olives
Put in food processor.

Mushroom Olive Dip:
onion, chopped
mushrooms, sliced
olives(green or black California), sliced
tomatoe sauce
Sautee onion. Add mushroom and sautee. Put the olives and tomatoe sauce in pot and cook on low flame for a long time till everything is nice and soft.

Spinach Salad:
fresh spinach leaves
tomatoes, sliced
red onion, sliced
green olives
Combine in bowl and dress with lemon juice and salt.

you know what is nice
just oilves cut up baby tomotoes cut up and red onion
salt peper and oilve oil and maybe a bit of viniger

Thanks so much everyone. I love olives but never know what to do with them.

I bought this huge can of Israeli pitted green olives so I am going to cook up a couple different kinds for shabbat.

BTW, Myomi, can you freeze your recipe? Looks like you should be able to. Except for the mayo recipes I would think that you could. Please let me know.

I have never tried frezing it before,we usually eat the leftovers with leftover challah and throughout the week.
but good luck! iam sure u will enjoy,as a matter of fact my olive salad is cooking on the stove as I type this.
