Lately I have been making home made falafel balls very often. It uses so much oil to deep fry them and it feels like such a waste. I have an empty oil bottle and would love to save the oil from frying tonight's falafel balls in it. Can I do that? Where would I store it, fridge or room temperature? Thanks.

I just wanted to let you know that oil over time can break down chemically when reused too many times. you should really google the subject so you make an informed choice.

That's one of the things that article said, not to use more than five times. I guess if it starts to look or smell strange I would stop using sooner. Thanks

You can but it's not a good idea. Heating oil produces cancer-causing compounds that will not be removed by filtering. The longer you use the oil, the more carcinogens. That's why I don't deep-fry, period.

I usually just re-use french fries oil because the oil usually looks clean and clear after, but I know in general it is not recommended to re-use.

I do save deep frying oil (from french fries, falafel, doughnuts, not chicken or meat obviously) and use it again. However, I don't use it for deep frying over and over again. Instead, I store it in a jar in the fridge and use it for baking (I've never found that it imparts a flavor) or sauteing. I had read the warnings that reheating oil to high temps, I.e. for deep frying, multiple times can be unhealthy. This way the oil is only reused once, and (at least if used for baking) at a lower temp.
