With mayo also can I use frozen corn? Do I have to Cook it first?

I make a Southwestern corn salad with mayo but I use canned corn. You could probably use thawed frozen too, but I've never done it.

1/2 small red onion finely minced
1-2 cloves garlic finely minced
1/2 red pepper chopped
1/2 green pepper chopped
2 cans corn drained of liquid
salt and pepper
chili powder and cumin to taste
chopped fresh cilantro or parsely
1/2-1 jalapeno pepper finely minced (optional)
a couple of spoonfuls of mayo--not too much though

Combine all the ingredients in a bowl and let sit for a while so the flavors blend. Garnish with some more fresh chopped cilantro or parsley.

Really easy, really good. Enjoy!

You can use frozen thawed corn without cooking it first, you'll just need to add some salt.

Corn Salad
corn
pepper diced (any color)
cucumber diced
purple onion diced
tomato diced
pickles diced

2 Tablespoons mayo
2 Tablespoons sugar
2 tsp vinegar or lemon juice
(salt if using frozen corn)

Enjoy!

Op here is it better to cook it first?(taste wise)

I made a corn salad last night which I loved.

4 ears of fresh corn in the husk
I container of grape tomatoes
1/2 a red onion, diced
2 avocados, diced
lemon juice
salt and pepper

I microwaved the corn in the husk (it steams) for about 10 minutes
let the corn cool off a bit and cut it off the cobs
mix everything together!

*I placed a small upside down bowl inside a bigger bowl and used the upside down bowl as a pedestal to place the corn in while I cut off the kernels...that way there is very little mess. Easy! I know you can use the canned/frozen corn, but I think the fresh tastes sooooo much better.

I do bag of thawed frozen corn, mayo, onion powder, garlic powder, pepper, and red peppers, tomatoes, pickles (all diced).

Anon because my corn salad is FAMOUS!

6 ears raw corn, but off the cob
even though it's not in season now, it tastes fresh and yummy.
Of course it should not be shriveled or yukky looking
(I've tried frozen and canned, no comparison whatsoever!)

1-2 red peppers, diced small
a few scallions, diced (how much depends how spicy you like it)

a touch of olive oil, extra virgin if you like the taste, otherwise mild
juice of one fresh lemon
2-3 cubes each of frozen parsley and basil
(this is essential, if you want it to taste really good, so go out and buy some!)

you can also use a cube of frozen garlic if you want
Let the frozen cubes defrost while you're cutting the corn, carefully with a sharp knife.
Mix well. Probably good to let it sit overnight.

If much is left on Sunday (probably won't be!) add a couple of eggs & a little matzo meal and make fritters! A diced onion wouldn't hurt either.

You may like a touch of sweetener, I use xylitol.

has anyone tried this one with corn cut off the cob (that op is famous for).
That means you just take a raw cob of corn and use the kernels that are cut-no cooking correct?

I make one very similar to that one but add a can of chick peas!! It's also very good!!
I don't use mayo in dressing.
Dressing is olive oil, salt, pepper, frozen garlic cube and (fresh) lemon juice!

Canned or frozen corn, it doesn't matter, just defrost and drain the frozen corn before you mix it.

Add mayo and any salsa you like (hot, mild, whatever.) Mix in black olives, and diced celery if you want some extra crunch. Easy peasy.

I think it tastes better if you make it a day ahead, so it's perfect for Shabbos lunches.

Canned or frozen corn (cook or defrost and drain)
chop red peppers into tiny pieces
add a bit of pickles if you like (we don't)
sprinkle oregano, salt, and pepper
add a spoon or two of mayo (depending on how big a salad you're making)
mix
