Nechama Dina's Three Layer Sorbet (minimal ingredients)

I saw this pretty sorbet in one of the magazines at my MIL's house and thought I would share for those of you who use minimal ingredients on pesach.

3 layer sorbet (the original recipe served 200 - I divided it by 15!)
2 pineapples, peeled and diced
2 magoes, peeled and diced
lemon juice
sugar
1 beet, peeled
1 honeydew, peeled and diced
1 1/2 kiwis, peeled

Blend pineapples, mangoes, lemon juice and sugar. Pour half of the batter into a pan and freeze (first layer). Set the rest aside.
Boil beet in a pot with water so it colors the water red. Pour some of this beet juice into the reserved sorbet. The more beet juice you add the more red it will become. Pour this "strawberry" layer on top of the yellow layer and freeze (second layer).
Prepare the top layer. Blend honeydew and kiwi (lemon and sugar to taste?) and pour on top of the red layer and freeze (third layer).

The final layer just has kiwi and melon - nothing else?
The original mixture is divided into two for the first two layers?

How much sugar do you think should be added?

Also, would puréed strawberries work in place of beet juice? I'd imagine so but am not sure of quantity.

If your fruit is juicy and ripe you shouldn't need much sugar. Just puree, add a splash of lemon juice, and taste to see how much sugar you should add.

Or course pureed strawberries would work Smile Just use a full layer of strawberries instead of yellow fruits colored with beets.

Does this scoop/cut relatively easy to serve? One year I tried making a mango sorbet and it was like scraping an ice cube Sad

Nope, it doesn't scoop.
Make it in a loaf pan so you can cut pretty slices. Or make them into ice pops. A reg 9x13 works too, just cut into squares/
