Ratatouille (can be baked or sauteed):
1 onion
3-4 zucchinis (doesn't need to be peeled)
1 eggplant (peeled)
1 tomato (optional)
tomato sauce
garlic powder, salt, pepper, italian seasoning
Sautee the onion until translucent in a large frying pan, add the sliced zucchini, eggplant and spices, (and tomato), cover and cook until soft and add the tomato sauce.
Avocado salad
5 - 6 avocados cut into chunks
1 can hearts of palm cut into chunks
½ a cup red onion diced
2 cups grape tomatoes halved
1 heaping tablespoon mayonnaise
Pepper
Splash of lemon juice.
salt

You can always make Schnitzel on Friday to serve Shabbos.
Cold cuts.
You can make cranberry apple crisp or sweet potato pie. I know of two recipes that are super easy and really really good.
This is from KBD kids in the kitchen:
1 (15 oz) can sweet potatoes ( you can find in your kosher store)
1 cup soymilk
3/4 cup dark brown sugar
1/4 cup flour
2 large eggs
1 1/2 tsp cinnamon
1/8 tsp salt
1 9 inch pie crust
Mash up potatoes, add rest of ingredients mix well pour into pie crust, bake for ten minutes on 400 then 350 for 40 minutes. I made this a few times already and its really good.
This recipe I have made more times than I can remember and always to rave reviews. Its from The Garden of Eating.
1 stick marg
1 tsp cinnamon
1/2 cup brown sugar
1 cup flour
1 cup oatmeal ( rolled oats are best)
1 16 oz can whole berry cranberry sauce
3 apples, peeled and sliced
Mix first 5 ingredients into crumbs. Press half in 8x8 pan. Spread cranberry sauce, layer apples, pour rest of crumbs on top. Bake at 350 for 40 minutes or until top is brown.
Good Shabbos!

If you want warm side dishes like kugels, just wrap them in foil and put them on top of the crock pot or urn. We do this every week and the food gets nicely warm.
