Tonight, for dinner, I made: Stuffed Baked Potatoes.
They were so delicious!!!
DH loved them so much, he asked me to make them again for Shavuos.... (we'll see about that....)
Here's how to make them:
Scrub potatoes
Cut them in half
Bake them (in the microwave) until they're soft
Scoop out the middles of the potatoes
Line the shells on a baking-pan
Mash the scooped-out potatoes, and add:
A container of Sour-Cream, lots of Grated Cheese, Canned Mushrooms, Spinach (I used Bodek), Spices: Salt, Pepper, Garlic, Onion Flakes etc...
Fill the shells with the filling
Place the pan in a hot oven for about 10 minutes, until the tops are golden.
Serve with Cherry-Tomatoes.
Enjoy!!!

What can I make as a main dish with these potatos cuz they are more of a side dish.

I don't know, when I make this, it's the main dish, because it has carbs, Protein and veggies all in one!
Oh! and it's VERY filling! (especially if you have a couple!!)
But, I guess any type of fish would go nicely with it too.
p.s. last time I made it, I also addes broccoli to the filling. It was YUM!!!
also, you can add a cont. of cottage-cheese to add some extra protein.
