any quick & easy eggplant recipes, such as a dip?
I have a whole extra peeled eggplant that I thought I needed for the eggplant parmegan...

make chazilim out of it. or cut up the eggplant in to pieces stir fry it with peppers, and onions until they become real soft, then add some salt and tomato paste and heat it up and wala another dip.

what is chazilim & how do you make it?
I thought that was just the hebrew word for eggplant.

poke holes in eggplant unpeeled (so I dunno if this will help u)
bake on 400F for 45 min, scoop out insides, mash and add mayo and spices eg garlic

Once the eggplant has cooled from the oven, I actually do BlumaG's recipe in my food processor. Makes it nice, smooth and creamy.

love it also with the food processer and it is so good that our community always asks me to make it for them or tell them the recipe.

My husband made a batch of mock liver its amazing. Fry a huge onion until golden brown. Grate the eggplant and fry it up with the onion for ten minutes. Blend it all up in a blender with some salt and mayo. Delish.

cut slices and bake it and freeze it and use it whenever you come up witha good idea (into lasgna, baked ziti, on pizza)
