Can anyone help me out with the carrot kugel recipe from the kosher palette-the one that you can use baby food in??

here's the recipe if you still want it.
4 large carrots, cut in 3 to 4 inch piece
1 C flour
½ C brown sugar
½ C sugar
1 ½ tsps baking powder
½ C oil or applesauce
2 eggs
1 tsp vanilla extract
Cook carrots and mash. Preheat oven to 350°. Add remaining ingredients; blend with an electric mixer until smooth (or if you like texture, mash carrots by hand). Pour into greased 9-inch round pan or 8-inch square pan. Bake for 45 minutes or until toothpick inserted in the center comes out clean.
I usually make this in a pie crust.

The kosher pallet has one where on a note they indicate that you can substitute baby food for the carrots. Its my DCS favorite kugel to eat, and my favorite one to make because its so easy!

I made it once and it was a big hit. I make the other one more often becasue I can double and triple the recipe and then freeze it, and becasue of the topping on the KBD short on time one I don't think it would freeze well. But it is really delicious...

I'm sorry I don't have the cookbook handy to type up recipe, but kosher by design-kids has a carrot kugel recipe using baby food jars that is very good. (I've made them into cup cakes)

to fill in the ? marks...
4 carrots or 8 oz baby food
1 cup flour
1/2 cup brown sugar
1/2 cup sugar
1 & 1/2 teaspoon baking powder
1/2 cup oil or applesauce
2 eggs
1 teaspoon vanilla

I make this recipe all the time - foolproof - and no fail - just my kind of dish. Usually, I make it into muffins, occasionally in a loaf pan. Either way it's yum like cake and you feel you're being healthy too.

If I don't have brown sugar can I just use regular? How much?
If I make this into muffins, how many does it yield? Does it rise in oven? Like if I fill it up halfways, will it bake till the top? Or should I make them nicely sized, and it will be as is?
