never occurred to me before ... but knowing a lot of vegetarians I decided to see what's out there for the vegetarian's shank bone ...
so far I've found using 2 eggs because of the different korbonos ...
a roasted beet - but nobody seems to know why

Maybe vegetarian imamothers can chime in?
If they're Ashkenazi, they might also tell us how they survive Pesach at all

as a former vegetarian, we used to borrow a bone from a neighbor.

Well, since only dh is vegetarian, we have a regular zro'ah at our table.
But he eats a lot of matzo, fish, vegetables, quinoa, nuts, dairy, and a combination of those (vegetarian meatballs, burgers).

We have friends who were vegetarian. The only fleishig dish they owned was the Seder plate.

I was in the supermarket one day, and there was a woman there who told me that she keeps her shank bone in the freezer all year and takes it out for the Seder. She has been using the same bone for 15 years now.

even I wouldn't like that vision & I'm only a vegetarian at heart ... [the kind who feels bad but eats meat]

I'm vegetarian, but my family is not. we use a chicken leg.
I survive pesach rather well, better than the rest of my family because I eat tons of salads and roasted vegetables. plenty of quinoa and nuts too. I aim for a vegan diet but I do make exceptions on yom tov, so I will also have salmon on shabbos and probably a couple of cheese omelets here and there. there's plenty to eat

At the YT meals he eats matzo, lots of dips, fish, soup with passover croutons, salad... Vegetarian liver, egg salad. I'll be serving zucchini lasagna one night, salmon and matzo rolls another. Cheese blintzes. Lots more. And all our side dishes are parve.
