Cookies 'n Cream Cheesecake
3.5 cups cream cheese
4 eggs
35 sandwich cookies
1/3 cup margarine
3/4 cup sugar
1 cup sour cream
1 tsp. vanilla extract
For decorating:
1/5 cups heavy cream
1 Tablespoon instant vanilla pudding powder
whole chocolate sandwich cookies
Preheat oven to 350 (175 C)
Remove cream cheese and eggs from fridge and allow them to reach room temp.
In the meantime, process 20 cookies in a processor till they are crumbs.
In a small saucepan, melt margarine. In a medium bowl combine melted marg. with the cookie crumbs. Press the mixture into the bottom and sides of a 12 inch round pan.
In processor, crush remaining 15 cookies into coarse crumbs.
Whisk the cream cheese and sugar with a fork till smooth and creamy. Add the eggs, sour cream and vanilla, mixing continuously. Fold in the coarse cookie crumbs and pour the batter over the crust
To decorate: Whip the heavy cream with the instant pudding just until soft peaks form (beware not to over whip as heavy cream turns into butter). Spread evenly over the cake. Using a wide tip inserted in a pastry bag, form cream "roses" at even intervals around the diameter of the cake. Place the whole sandwich cookies between the ice cream roses and sprinkle cookie crumbs in the center.

Creamy Chesse Babka
Dough:
4 cups all purpose flour
1 Tablespoon active dry yeast
3/4 cup lukewarm water
1/2 cup sugar
1/2 cup unsweetened applesauce
2/3 cup canola oil
2 eggs
Filling:
8.8 oz. farmer cheese (250 gram)
1 Tablespoon instant vanilla pudding
1 handful raisins (optional)
Glaze: 1 egg, beaten
Streusel topping:
2 cups flour
1/2 cup oil
1 cup sugar
Preheat oven to 350.
Line bundt pans with baking paper
To prepare the dough, in a large bowl beat the flour, yeast, water, sugar, applesauce, oil and eggs with an electric mixer until a soft ball of dough that separates easily from the sides of the bowl is formed.
To prepare the filling, combine all the filling ingredients in a bowl.
To assemble the babka, divide the dough into 4 equal parts. Roll out each piece of doug 1/2 inch thick. Using the back of a spoon, spread the cheese filling over the dough. Sprinkle the raisins on top, if using. Roll the dough jelly roll style, enclosing the filling. Tuck the ends underneath. Place the logsiin the lined Bundt pans. Cover with a towel and allow to rise in a warm lace for a half hour until doubled in size.
To prepare the streusel topping, combine the flour, oil and 1 cup sugar in a large sealable bag, kneading gently with our fingertips until course crumbs are formed.
Brush the logs with the beaten egg, then sprinkle generously with the crumbs.
Bake for 3 minutes until golden brown.
