please post ur Favorite carrot muffin recipe. I'm looking to make preferably w/o jars.

3-4 carrots (I think the original recipe called for 3 baby jars)
4 eggs
2 c. sugar
2 c. flour
1 c. oil
2 t. baking powder
1 t. baking soda
1 t. salt
1-2 t. vanilla extract
1-2 t. cinnamon
cut carrots in chunks. Put in food processor fitted with "s" blade with the eggs. Blend well. Add the rest of ingredients. Bake at 350 until toothpick inserted in center comes out clean. Makes about 36 muffins.
When I'm lazy I bake this in 9x13 for 50-55 min. but it doesn't come out so nice. It tastes good, though!

carrot muffins:
2 eggs
1/2 cup oil or margarine
1/2 cup brown sugar
1/2 cup sugar
1 cup flour
2 tsp baking powder
1 tbs vanilla sugar
1 tbs orange juice
2 cups very finely grated carrots
1 tsp cinnamon
Preheat oven to 350 degrees. Place all the ingredients in a large mixing bowl and stir until combined. spoon into 10 lined muffin tins. Bake for 45 min.
