my DH is in love with this dish but it allergic to milk. he has horrible sinus issues and digestion problems after eating it, I want to be able to make somehting similar to it for him. I enjoy making things he loves but I can't make him sick (he doesnt seem to mind it).

I made it a few weeks ago, ya gotta really like the pareve stuff to appreciate it.
It's basically the same recipe as the dairy, just with everything pareve, like the pareve sour cream.

I never much care for pareve versions of things that are supposed to be milky or meaty ... ain't nothing like the real thing ...

Well........I had to avoid all dairy and flour for a while, and made myself someting like that, but I really couldn't eat it ........ the kids wouldn't even sit with me at the table!

not exactly alfredo, but I do a mix of 2 tbsp mayo to 1/2 cup soya milk. I usually do it with stirfried veg, and spices.
If you wanted more authentic alfredo style, I would fry some chopped garlic, then add the mayo and soya milk, boil till creamy and then pour over pasta.
hope it works...

Like my son, he loves the fake cheese because he has never had real cheese.
My younger son had cheese for the first time this week and he loved it.

You could probably make a sauce with margarine, non-dairy creamer (or soy milk), flour, and either fake sour cream or cream cheese.
You could probably make it like this:
prepare a roux, add the fake milk, whisk it together with the roux, keep it on a low flame and let it thicken, and then add the fake sour cream. Also add some salt and pepper.

Roux is flour mixed with fat (usually oil or butter). You melt butter or marg, or heat oil in a pan, then add flour to make a paste. A liquid (milk, broth, etc.) is gradually whisked into the roux (milk, broth, etc.) to make a thickened sauce.
