My aunt adapted this granola bar recipe to make it healthier, & I've been playing around with it, making my own changes...I made a batch this morning, & it came out good, so I thought I'd share... I find them to be a really good snack when I need a pick me up, or I'll grab one with a glass of skim milk when I have no time for a bigger breakfast.
(Warning! They do taste healthy, so if you're not into that kinda thing I guess you won't like it. )
3 cups oatmeal
1/4 cup oil
1/2 cup applesauce
3/4 cup honey
4 egg whites
3 cups cornflakes
1/2 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
Mix with an electric mixer. Spread into a 9 x 13 pan & bake 15-20 minutes at 350. Cut when hot. Store in fridge or freezer. (I pressed in some chocolate chips to part of the dough before baking to entice my (junk food loving) hubby to eat some. )
The original recipe (without all my changes!) is also supposed to be good:
3 cups oatmeal
3/4 cup oil
1 cup brown sugar
1 cup sugar
2 eggs
3 cups cornflakes
1/2 cup flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon

cheerios, they really are yummy - we're enjoying them, but they're not really like regular granola...more soft and chewy.

Thanks for the recipe. I've made tons of batches of them in the past week with a bit of variation. I researched tons of recipes for granola bars and this is the best one.
I didn't find they tasted very healthy, I think lots of people would like them. The way I did it, they come out like a mix between a granola bar and a cereal bar.
Here's what I did:
3 cups oatmeal
3 cups diff crushed cereals: corn flakes, whole wheat flakes, rice crispies, and cheerios
3/4 cup wheat germ
1/2 cup whole wheat flour
raisins
craisins
choc chips
1/2 cup applesauce
1/4 cup canola oil
2 eggs
1/2 cup honey
bake at 350 for about 20 min.
I would also add different kinds of nuts, seeds, peanut butter, coconut. I put apricot jelly in the last batch, we'll see how they come out.

I was just gonna ask: Do you use the Quick Oats? or the thicker kind? (not sure what they're called....)

I just made another batch. I left them on the counter to cool and I came back to find the stepstool by the counter, the corner of the bars dug out, and my 2 year old told me: "I took a little bit!"
