Something without puff pastry, filo, or other high fat crust.

So I buy a prebaked pie shell- the frozen kind. I defrost a box of spinach and squeeze out the excess water. I add one fried onion, a can of mushrooms, envelope of onion soup mix, 2 eggs, tbsp of mayo, a splash of milk and a bag os shredded cheese- any kind. Mix all together, fill shell and bake for about 40 min- 1 hour.
Its my husbands favorite dairy dish.

Oh sorry - I have also made this in a pyrex with no crust/pie shell at all and it is equally as good!

This is good, I've made it before:

Spanakopita, Streamlined

Ingredients
Cooking spray
1/2 cup all-purpose flour
1/4 teaspoon kosher salt
3/4 teaspoon dried oregano
1/2 teaspoon baking powder
3 large eggs
1/2 cup fat-free milk
3/4 cup crumbled feta cheese
1/4 cup preshredded part-skim mozzarella cheese
1/4 cup minced fresh onion (about 1/4 medium onion)
2 garlic cloves, minced (about 1 teaspoon)
2 (10-ounce) packages frozen chopped spinach, thawed, drained, and squeezed dry
2 tablespoons chopped pitted kalamata olives


Preparation
1. Preheat oven to 350°.
2. Coat a 9-inch pie plate with cooking spray; set aside.

3. Combine flour, salt, oregano, and baking powder in a small bowl; set aside.

4. Beat eggs with a whisk until frothy (about 1 minute); add milk, cheeses, onion, and garlic. Add spinach and olives, stirring mixture well with a fork. Using a rubber spatula, fold the reserved dry ingredients into the spinach mixture. Transfer to prepared pie dish, and smooth top.

5. Bake at 350° for 45 minutes or until the filling is slightly puffed, lightly browned around the edges, and set in the center. Remove from oven, and cool 5 minutes before serving.

Yield
6 servings (serving size: 1 wedge)

I make stuffed manicotti and it's yummy. I mix some defrosted frozen spinach with fat free cottage cheese, sauteed onions and garlic, some shredded mozzerella cheese (you can vary the amount of cheese depending on how much fat you want or don't want!), salt & pepper. Stuff this mixture into cooked manicotti noodles. Pour some marinara sauce into a pan, put the manicotti in, top with some more sauce and a sprinkle of shredded mozerrella. Bake until cheese is melted.

how much is an envelope of soup mix? I use the bigger containers...

The crustless spinach quiche from the Kosher Pallette is really delicious! I make it all the time. Here's the recipe:
Crustless Spinach Quiche
2 large eggs, beaten
1/2 cup milk
1/2 cup mayo
1 small onion, chopped
2 (10 oz.) packages of frozen chopped spinach, thawed and drained (squeeze out water)
3 T cake meal/matza meal
2 cups (8 oz.) shredded cheddar cheese
2 cups (8 oz.) shredded mozzarella - I use half this amt. and its plenty

Preheat oven to 350. Combine eggs, milk, mayo, onion, spinach, cake meal, and cheddar cheese in a bowl. Pour into greased 8x8 pan, sprinkle with mozzarella cheese. Bake 30-45 minutes until puffed in center and knife inserted near center comes out clean. (usually closer to 45 min.)

I'm just in the middle of making a 'cream of spinach'

1 tablespoon olive oil - heat in big frying pan
2 crushed garlic - add to oil
2 lbs frozen spinach - add to oil and garlic, mix and let cook for about 8-10 minutes

2 cups heavy cream - add
1 cup parmisian cheese -add
let cook untill blended and thick
add salt and pepper to taste.

you can serve it with pasta or grill fish over it.
