So I took a little bit of wisdom from Basya and a little bit from YoungMommy (from the other zucchini thread) and created this hearty recipe: I peeled and sliced one medium-large zucchini,
cooked it in some water and a splash of freshly squeezed lemon juice, until somewhat soft,
added a dash of ground curry (first time I've used this),
salt to taste,
a dash of garlic powder,
blended in the food processor (or blender),
And voila! It's all gone!
By the way, anyone know of any particular health benefits in zucchini?
