SCD menu for shavuos

Please help me plan an SCD friendly menu for shavuos that I can prepare in advance and will reheat well. Fleishig preferred.

I'm making meatloaf, almond breaded chicken, almond breaded fish, carrot zucchini pancakes, almond flour pancakes with fruit syrup, squash fries, apple crumble, yogurt (obviously not all for one meal). oh, and salad and probably mayo dressing on the side. and fresh fruit.

Poached / pickled salmon can be stored in the fridge for a few days. I need to see if I still have the scd recipe.

Roast beef with roasted butternut squash mash can be frozen in advance.
Sautéd zucchini I've had success in freezing for a week, up to two.
Cauliflower mock potato soup and creamy zucchini soup.
Bagged frozen vegetables can be put over a double broiler on the plata to steam fresh before the meal.
Vegetable stuffed capons may be something that you can freeze.
Moussaka can be frozen.
Maybe an scd shepherd's pie.
Freeze cauliflower crumbles and a freeze a separate sauté to add for "rice "

generally not. I deep fry them, and there are never leftovers. I imagine reheating in the oven would work, but the crunch wouldn't necessarily be there.

I'm actually filling some capons now.
Cut carrots, zucchini and red onion into 3" matchsticks. Sauté carrots, red onion and crushed garlic for 2-3 minutes then add the zucchini for another minute, keeping the vegetables crisp. Season well.
Rub capons all over with garlic and salt. Fill with bundle of colorful vegetables. Roll and secure with toothpicks. Arrange snugly into a pan. Sprinkle tops/skins with paprika. Bake until done.

Butternut squash mash: cut butternut squash in half and scoop out seeds arrange cut side down on a greased cookie sheet. Bake uncovered at 350 until tender. Scoop out butternut squash and mash until creamy, seasoning with salt and pepper, tasting as you go. (You can add some sautéed onion and garlic if you'd like.)

Roast Beef: I'm in middle of prepping and marinating one right now too Smile
I add more salt to the rub for marinating and skip any sauces, just reheat in the cooking liquid and it comes out phenomenonal.

I don't have specific measurements.

shred zucchini, salt and drain. squeeze out excess liquid
shred carrots
add salt, legal onion powder (I use prima)
add eggs
mix, fry
