How long should I let my challah dough rise?

About an hour or until doubled in size. Leaving longer generally doesn't do any harm (I'd say up to about 6 hours, perhaps even more).

till it's fluffy & 3/4 or double in size ... rising too many times and kneading will make it tough & yeasty tasting
then I shape it & let it rise again - but be careful not to over rise because the bubbles will burst & collapse - if it's almost risen it can do the rest of the way in the hot oven
