Anyone have a recipe for healthy custard?
Looking to use to make donuts(don't worry healthy version).

I have a custard recipe using my vitamix blender.
It cooks the custard in the blender.

1/3-1/2 cup sugar (I use xylitol)
2 egg yolks
2 whole eggs
1 1/2 cups almond milk
2 Tablespoon corn or potato starch
1/2 cup almond milk
2 teaspoon vanilla extract

Blend sugar, egg yolks, and eggs.
Heat 1 1/2 cup of almond milk.
While the blender is on slowly pour the 1 1/2 cup of warm milk.
Blend for 7 minutes.
Mix the 2 TBSP of starch with the 1/2 cup of almond milk.
Add the mix slowly.
Blend until mix starts to thicken.
Add vanilla.
Blend for 1 more minute.
Pour into bowls and chill.

You can also Google raw vegan custard, but these are coconut meat or cashew based. Expensive and full fat, but very healthy.


Can you post the healthy doughnut recipe please.

Do they all have raw eggs? Can't eat raw eggs.

I don't have a recipe on hand need to find one but I use more of a dough one and bake them I don't fry them.

The eggs get fully cooked in the vitamix.
It's piping hot.
I guess you can make it using a double boiler and constantly wisking.

What is the temp of the almond milk? You didn't mention a temp when you said to heat it. IIRC an egg can be brought to 160 for 3.5 minutes to pasteurize.

Just to clarify.
This is a cooked custard.
The vitamix heats up piping hot, you can burn yourself, just like cooking.
The eggs are completely cooked in this recipe.
If you leave it in the vitamix too long you will get scrambled eggs.
This is not raw egg recipe.
Only a high power, 2hp, blender can do this, I.e. Vitamix or Blendtec.

The vitamix cooks food, like piping hot burn your tongue soup.


I warm up the almond milk in the microwave, about 45 sec-1 min. Until it's hot but not bubbling .

Probably not,

But you can do this over a double boiler,but you have to constantly wish it.

Sometimes the cornstarch box has a recipe.
