I make a hearty soup with veggies ... rather enjoy the simplicity ... if I do add anything extra ... on ocassion it might be some rice when serving ... or if there is only broth left some croutons (the little crunchy kind) or are they called mandlach ...

Carrots, chicken, onion & celery. Then I make kneidlach, lokshen, or if I'm lazy or have no time - croutons.

I've been soup-nut clean for several months now. After seeing the amount of calories and fat that are in each serving, I eliminated them!!!!

I use crackers instead now.

Chicken, lots of veggies (carrots, celery, zuchinni, onions) - and egg noddles on the side in case someone wants to put them in

kreplech only on the days that it is a minhag.

Knaidlich if I have time.

lokshin if I don't.

+ croutons/mandlen/little yellow things (whatever you call them) if the kosher shop has them in.

and all sorts of veggies, swede, sweet potatoe, courgette, carrots, celery, parsnip, leeks, onion garlic. Not that much chicken, although it is better if I put in more. I use the bones.

I haven't put noodles in soup in a long time, maybe I'll do that for yomtov.

At some point, I want to try to make dumplings, though. I wonder if they freeze well?

to me dumplings go better with vegetable soups, not chicken soup. They should freeze fine though, same principle as knaidlach.

I love Chinese soup. Problem is you need to carefully check the ingredients, so bring your list of forbidden additives with you.

oh so we're talking more than chicken soup here ... I make a mean vegetable soup ... with baby matzoh ballies ... totally pareve and very yum ...

I also make a hearty split pea soup that I serve in a mini pie crust ... sort of like a pot pie ...

thanks everyone

at the noodle suggestion, I fished out some very thin noodles and added them to the pot on the blech before shabbos.

I'll prob. do the same thing this yomtov, as I made 20 quarts of soup and only served it once, since it was so warm over yomtov!

kneidlach
diff types of croutons once in a while

Defy, what type of crackers do you put in? They can be just as fattening as croutons.

Erev YK I had a drop extra ground beef mix leftover from my kreplach, so I put a small amount in each kneidel. It was pretty neat.
