Very fast as I've got to run, but a few ideas:

baked ziti
lasagna

side dishes:

I'll have to check what I wrote down for next weeks menu, but will be looking out for different ideas from others as well!

made this tonight & everyone loved it!

Filet of Sole Fish

Dipped the fillets in a tiny bit of creamy italian dressing (parve), then some bread crumbs broiled each side on low for about little less than 5 min.

My mother's philosophy has always been that you don't celebrate the Nine Days by cooking fancy. Her menu suggestions:

tuna sandwiches, or tuna stuffed in green peppers
grilled cheese
fried fish and spaghetti in tomato sauce (fancy! Very Happy )
tuna patties
cheese latkes
soup with toast
scrambled eggs

Hope this helps!! LOL LOL

Sarahd - I never thought about it in those terms before. I really admire and respect your mother's philosophy. Truth is, we always eat simple parve/milchig during those times anyway because we are just not into the fancy foods whose names are usually unpronouncable anyway!

Same here. I don't make anything elaborate.Just what I would have made any other time for a milchige supper.

cheese latkes

I was thinking of making potato latkes, but they may be too much of a treat (and a patchka) for the 9 days. what's in cheese latkes?

other side dishes:
home-made french fries
baked potatoes
different salads

my dh thinks bagels/eggs/lox... are too much of a breakfast, so he won't eat them for dinner (unless it a break-the-fast meal)!

farmer cheese, usually. Eggs, flour, sometimes farina, some sugar. I don't have an exact recipe because I don't often make them. Mine never turn out.

anyone know if I can serve my leftover chicken from this shabbos to my (almost) 2 year old during the 9 days? I'm trying to make all my side dishes pareve so the leftovers can be used next week, too!
I went to my rav's shiur on the halachos of the 3 weeks/9 days. He did say something that if you want to serve your kids dinner next friday before shabbos starts, they can have fleishigs.

not necessarily.

0613's example was giving kids their shabbos meal early (bec. they can't stay up that late). Her question was regarding a regular weekday dinner, not erev shabbos.

One of my students told me he had "pizza spagetti" for dinner one night...I thought he meant just with sauce and cheese and he told me no, it was with eggs, etc. I said, "sounds good, can you bring me in the recipe?" and the next day he did! (this is a 5 yr old).
I actually tried it today (exept in the wrong size pan) and we really enjoyed it!!

1 lb spagetti - broken into 2 inch pieces and cooked
2 eggs
1/2 cup milk
4 cups grated cheese
1/2 tsp salt
1/2 tsp garlic salt
1 32 oz jar thick marinara sauce (mine was less oz...worked out fine)
2-3 tbs oregano
1 tsp basil (I didn't have any)

beat eggs, add milk, 1 cup of cheese, salt and garlic. stir in cooked spagetti. Spread evenly on oiled 10 1/2 x 15 1/5 baking tray (what size is that????)
Bake 425 for 20 minutes.
Remove from oven. Reduce heat to 350.
Spread sauce on pasta. sprinkle with oregano, bail and remaning cheese.
bake 35 minutes.
let cool for 5 minutes. cut into squares.
optional: slices peppers, onions, or olives may be added before baking.

any interesting recipe to try. it sounded good -- and we liked it! if anyone tried it out, let me know how it comes out!

Well, I don't have a source, but I receive a halacha email and this is what it said:

*You should not eat meat or poultry, nor drink wine or grape juice during this period.
*This includes food made from meat (I.e. soup) even if the meat is no longer there.
*Parve food cooked in a meat utensil may be eaten.
*Beer, whiskey and liquors not containing wine may be consumed.
*Children over the age of six should also abstain from these items.
*If they are weak or ill then they can eat what they need.
*Preferably poultry should be used if possible.
*A person who accepts Shabbos earlier, or who extends Shabbos on Saturday night, may eat meat or drink wine during this extended period.

lucy, I sort of improvise as I go along, but here's the basics:

dip flounder or sole in egg and cornflake crumbs and bake until fish is flaky.
cover with cheese (I use muenster or mozarella) and bake until melted.
top with heated tomato sauce and that's it. (or when you cover it with cheese you can add the sauce too and heat it in the oven.)

I usually use a can of tomato sauce and add a few spices and also chop up fresh tomatoes into it.
