Hashgacha jobs often have hours that aren't family friendly. Add in the sexism of a frum male-dominated industry, and the fact that this is one of the few jobs you can get with little secular education, and that's why you don't see many women in the field.

Until the modern age, food was prepared at home, and all hashgacha work was done by women.
