I have some chicken cutlets and want to integrate them in a chunky stew kind of idea. I'm picturing quinoa, beans, and/or lentils. Chunky vegetables. Maybe tomato sauce, maybe not. Any ideas?
I make something I call 5 min vegetable soup that you can add the cutlets to. It's not too unhealthy. It's fast and yummy.
2 cans fire roasted diced tomatoes with liquid.
1 bag frozen gumbo vegetable mix
Water
Powder consume mix.
Dump in a pot, bring to a boil, simmer for about 1/2 hr.
You can add the cutlets after its simmering.
