This is my own made up version. I don't have exact amounts:
2 small cans mushrooms drained and mushrooms chopped finely
2 large onions diced
1/2 red pepper diced very small
Sautee onion and pepper in a sauce pan until onions are clear and peppers softened . Add mushrooms.
Then add:
1 tbsp flour
1 tbsp onion soup mix
1 tbsp mushroom soup mix
Stir so it coats the sautéed mushroom mix
Add about 1 1/2 cups boiling water
Add small amount of salt to taste ( the soup mix has salt, keep that in mind)
Pinch white ground pepper
Sprinkle onion powder
Cover pot and simmer on medium flame. If too watery uncover and let liquid cookout until thickened consistency . If too thick add water.

I like to avoid too much onion since it can overpower the mushroom flavor.
My suggestion is to sauté the mushrooms and use mushroom soup mix.
I’d guess that it would work in a white sauce. You would need a milk substitute though.

I would also suggest rinsing and drying the mushrooms before sauteeing- that helps remove the 'canned' taste
