I want to bring Dessert to the purim meal and I don't want to be busy scooping ice cream. I was thinking of making single dessert cups! Anyone have a good simple easy recipe that can be done in advance? Something more than a scoop of ice cream!

Make a cake on a jelyroll pan. Cut it with a round cookie cutter to put in cups.top with a generous scoop of ice cream and an attractive topping.
