How do I take the sponge cake from a removable tube pan so it will be perfect? Have you tried Making a sponge cake and turning it upside down with a parchment paper in the bottom? Any other idea? Mine comes out beautiful but have problems taking out from pan...

Grease yes flour no, don't like when you can see or taste the flour on top... have anyone tried with parchment paper?

Use the combination oil and flour spray. It doesn't leave a flour residue.

What about for pessach cakes when I can't use the spray?
Either they don't come out , or half falls out when I turn the pan over & the other half sticks.... (I do grease the disposable pans well)

I use parchment paper for everything and have never had something stick to it. You can sometimes see the creases in the paper in the finished item, if you're the type of person who cares about that sort of thing.

Thank you all, tried the parchment paper before seeing the replies and put some batter under the paper so it sticks to pan and some oil on top of the paper and it worked very well!

You're not supposed to be grease tube pans. To rise properly, the sponge cake needs to grip onto the pan.

It's supposed to stick, otherwise it would collapse and sink.

When it's done, you need to turn it upside down until it cools. Then you can run a knife around the edge and pull out the base section. You can remove it from the base in the same way.

I don't think you can bake a real sponge cake in a disposable tube pan. Those are mostly just for aesthetics - ie. you want a cake in that shape, not an actual sponge.

I used to have a real one but it always leaked on bottom.
I only ever make sponge type cakes for pessach , so I use the disposable tins

I use only real ones, comes out much better. I put silver foil on entire bottom, wrapped around outside, just in case it leaks. comes out gorgeous

I knew you're not supposed to grease but doing the way a did only parchment in the bottom ( see my last post for details) worked perfectly bh! I was thinking of doing the same thing by the side but afraid it will collapse...
