Some people make them out of ground chicken bottoms, fried onions, eggs, baking powder and potato starch. I dont have a recipe though. Sorry. It just tastes like a chicken burger.

When I make, I make chicken matzah balls with ground chicken, zucchini, onion, eggs, salt. They're yummy.
Also julinenned zucchini for noodles.

here is a recipe for chicken ones. Not the same as matza but delicious. freeze well.
1 kg minced chicken
4 eggs
4 small potatoes, boiled and mashed
Salt
Mix all together. Fridge for 1 hr. Using wet hands, doll into balls and drop into salted boiling water. Cook for about half an hour.
I save the cooking liquid and use it for my chicken soup.

I have tried many (many) times to make them without a mix and they flopped every time and fell apart.....I gave up and started only using the mix. Please report back if you figure out how to do it!
