The gluten free crumbs are decent.
I've also coated chicken in coconut flakes or almond flakes.
Or marinate in olive oil, garlic and whatever other seasonings you use, then bake.

I make year round like this and I can't stop eating them. I slice the chicken into strips and dunk it in egg then into potato flour mixed with salt, pepper, onion powder Parprika, parsley, garlic powder. Then fry. They come out puffy and delicious.

I know this post is from a couple of years ago, but hey, shnitzel is shnitzel!
So, is potato flour the same thing as potato starch?
