Does anyone have experience using tapioca flour for baking for Pesach?

Yes. It works wonderfully as a substitute for potato starch/flour.

I was told it could be substituted for regular flour in recipes by making a mix of tapioca flour, potato starch and almond meal or coconut flour. Has anyone tried?

Coconut flour and almond flour aren't interchangeable but you can find successful recipes online under Paleo recipes. Regarding tapioca flour, I often use it to cut the amount of almond flour that I use in a recipe that calls for a lot because it is so expensive. It does work like potato starch but it is a bit gummier so a whole recipe using tapioca starch/flour would be weird. I make tortillas with it but I like baking them into crackers better as the tortillas are gummy.

Has anyone tried making a rux with tapioca starch instead of flour.
Will the sauce come out clumpy or smooth.

It's not interchangeable. You would need to figure out an exact science between them all to get the right mix because they each have different properties, and alone, none are direct substitutes for flour.

A friend told me that you can use the following mixture to replace flour in baking recipes. I haven’t tried it yet, but she swears by it:

2 c . Almond flour
1 1/3 c . Tapioca flour
2/3 c . Coconut flour

1 cup of the mixture = 1 cup of flour

I've used tapioca instead of potato starch and the cakes actually came out more moist and fluffy.
