Buy an oval Hamilton Beach. This size is good.
https://www.target.com/p/hamil.....aw.ds

Approximate? 4 beef neck bones, 1.25 pounds meat, 2 medium onions, 6 large potatoes, lots of salt.

Thank you so much for all the details in the thread! Looking forward to trying this. Forgive me for asking a basic question, but how much salt would you say is a lot of salt?

And I noticed you said grated onions, but shredded potatoes? Is that intentional? Should I prep them differently?

And lastly, I have beef knee bones and marrow bones on hand, but not neck bones. Which one would you recommend? Or is it worth trying to get home neck bones tomorrow?

Thank you again!

For 6 xlarge potatoes (3 lbs), then 4 tsp salt.

About the onions, they just don't shred lol. You end up with onion water and separated sediment. So I grate it by hand or process it in the food processor with the s blade. But the potatoes should be shredded. You want that texture.

Gotcha, thanks! And I edited my post above right before you replied, so I think we cross posted lol. I have beef knee bone and marrow bones on hand, but not neck bones. Which of the two would you recommend? Or is it worth trying to get hold of neck bones specifically tomorrow? Thanks again!
