The best shnitzel I make that everyone devours is mix: paskesz (only that company) pesach crumbs, mashed potato flakes, and ground almonds. About equal amount of each. Dip cutlet into potato starch, then egg, the crumbs. Spray or oil parchment paper lined baking sheet, bake at 400 each side about 10 min depending on thickness. Do not overbake!
