I need to beef up my menu with additional side dishes and I have no idea what to make!
I've already got steamed mixed vegetables, broccoli kugel, roasted cauliflower, matza farfel kugel, sauteed spinach, sweet carrots, and roast potatoes. Any additional ideas?

Matzoh "stuffing," just use your favorite Thanksgiving-style stuffing recipe with matzoh pieces instead of bread crumbs. It is a favorite at ours every year. This year I'm trying potato gnocchi with basil pesto as an additional side dish/vegetarian entree.

Sounds like a lot to me!

Asparagus? Roasted brussels sprouts? Mashed potatoes or potato kugel? Pineapple kugel? Quinoa salad? Avocado and tomato salad?

Cucumber salad, cabbage salad, broccoli salad, mashed potatoes, roasted potatoes,red potatoes, sweet potatoes, zucchini kugel, potatoe kugel, zucchini mushroom kugel, onion kugel.....

Possibilities are endless. You might be limited bed in which ingredients you do/don't use but you didn't specify. Try looking at kosher.com and search for pesach recipes. Or even just try googling.

I found this recipe ages ago on imamother, it was posted by chocolate moose (is she still on here?). I've adapted it many times and use other veggies in addition to mushrooms, like bell peppers, broccoli, zucchini, etc. I have also used onion powder instead of garlic powder. It lasts for several days in the fridge and is served cold, making it very convenient.
Mushroom Salad
3/4 cup oil, less is OK too
1/2 cup vinegar, any kind
1/4 cup water
2 tsp salt
2 tsp garlic powder
pepper to aste
1/4 cup sugar

Boil in small to medium pot then let simmer for about 5 minutes.
Slice box of mushrooms and add.
Let simmer another 3 minutes.
Add a shake of Italian seasoning.

Let chill and serve cold.

I'll tell you what I made:

sweet potato kugel (mashed style not grated)
potato kugel
doughless knish kugel
cole slaw
cucumber salad (both salads keep in fridge for a few days)
roast mixed veggies (carrots, parsnip, beetroot)
Maybe I'll make mashed potatoes as well.

I leave an oven on so will roast veggies on yom tov if needed.

Sounds like you have a nice variety!

We don't use some of what you mentioned so my side dish list is really small!

But you if you want you can add some of the things I'm making.

Sweet potato fries (can cut it before y"t but needs to be fried fresh)
Apple Crumble (delicious recipe lmk if you want it)
Carrot salad (I shred carrots in the food processor before y"t and add homemade orange juice right before the meal)
Satueed zucchini (needs to be made fresh)

And let's not forget the classic fresh mashed potatoes.
As much as I try to have variety, I know my kids will have what to eat if I make that.

How many meals is this for?
I just make sure there's a starch side, veggie side and salad at each meal. Do you have that?

Here's the apple crumble recipe if anyone wants it.

Apple Crumble

Crumbs:
2 1/2 cups potato starch
3/4 cup sugar
1 egg
1 cup oil
Mix together and add
1/2 cup ground almonds

Apple Mixture
9 medium cortland apples (shredded with the big hole shredder or the thin slice blade on the food processor)
(Works with green apples too it's just a different taste and texture)
1/2 cup sugar
3 full tsp lemon juice

Put apple mixture into a lined pan. Crumble the crumbs on top. Bake on 325° for about 1 hour.

Freezes well

I am limited because I don't use vinegar (due to an aversion , not Pesach-related) which pretty much eliminates salads. I am also limited with kugels because I do not have a Pesach-dik food processor.
What is the pineapple kugel recipe? What is the carrot muffin recipe?

I don't use vinegar because I prefer lemon. You can make any salad.
As for kugels, you can make spaghetti squash kugel which doesn't require a food processor.
I also love summer squash and tomatoes; yellow and green zucchini with halved grape tomatoes and garlic. And savory beet salad.
