2 potatoes cooked & mashed
2 eggs
1/2 cup potato starch
Salt
Pepper
Onion powder
Mix, spoon into cupcake holders or scoop onto cookie sheet. Smear with egg wash bake @ 350 for 1 hour or until golden

This one is for individual knishes:
1/4 c. oil
2 lg. onions, diced
4-5 lg. potatoes
3 eggs, beaten
1 c. potato starch
2 tsp. salt
1/8 tsp. pepper
1 egg yolk, beaten for brushing
Cook potatoes until soft. Drain and mash well. Preheat oven to 350. Dice onions and sautee in oil. Combine with remaining ingredients. With wet hands form into 2" balls (or scoop with a small scooper). Place onto lined or greased cookie sheet. Flatten slightly for flat knishes or leave in balls for puff style knishes. Brush with egg yolk. Bake for 20-30 minutes or until golden brown.
