My pesach kitchen is so limited! And we have nut allergies. I am looking for some good blondies, and other non chocolate cakes( no room for cookies in toaster oven) with no nuts, or separating eggs, or coconut. Kugels that don't require grating or shredding also appreciated! I do have a blender. Thanks so much! Happy and serene Pesach to all!

Never tried these before, but on my wishlist to do. If you have a pot to melt chocolate chips, and the means to slice bananas (I wouldn't bother with the heart shaped cookie cutter), then I would try these:

I have an easy marble cake recipe that fits your specifications but it calls for matzo meal so it's only good if you eat gebrokht.

Chocolate chips are fine. I just have a chocolate cake and brownies already.

You kind of set the limits yourself OP. What's so difficult to separate eggs? Same with kugels: most of them requires grating and shredding. What's the big deal? Use grandmother's traditional grater.
OP, if you want somehing yummy it takes effort in the kitchen or make due with store bought delicatessen items. Looks to me you don't really enjoy cooking.

I have a nice size cooking area, I enjoy cooking for pesach and yet, I too, won't separate eggs for baking or shred/grate vegetables for kugels (other than potato!) . Why make things harder if there are so many simpler, and delicious, options?

Here is a recipe for crumb cake, I think it's from kosher by design. It calls for a crumb topping but we prefer it without.

1 cup sugar
1 cup brown sugar
1 teaspoon baking powder
1 tablespoon vanilla sugar
1 cup oil
1 cup potato starch
4 eggs

Mix with mixer.
Bake for about 45 min to an hour but you have to watch it for doneness.

I love baking all year round, just have no eggbeaters, and lots of little kids with nut allergies!
I was hoping for a sweet potato or carrot kugel recipe that calls for mashed, not grated veggies.

I made a delicious savory sweet potatoe kugel . I don't have exact amounts since I made up the recipe as I went along. This was the basic idea.
4 sweet potatoes cut lengthwise in half , unpeeled
Sautéed onions
3 eggs
But of walnut oil ( but you can use any oil)
Salt

Lay sweet potatoes , flesh side down in baking sheet. Bake till soft
Scoop out sweet potatoe , mash , add rest of ingredients . Pour into a deep greased pan (half of a 9x13 size) . Bake at 350 until sides begin to crisp and brown, approx 1 hour

Hmmm, this calls for a bit of clarification. You love to bake yet you have no egg beater? shock
I don't bake for pesach as I have no pesach oven (unfortunately). A matter of storage At wits end

Easy Marble Cake

2 eggs
2/3 c. sugar
1/2 c. oil
1/2 c. OJ
2/3 c. cake meal
1/4 c. potato starch
1 tsp baking powder
1 rounded tablespoon cocoa
3 tablespoons coconut,optional (I don't use it).

Preheat oven to 350 and grease small loaf pan.
In a small bowl, mix cake meal, potato starch, baking powder and coconut.
In another bowl beat eggs and sugar for 2 min (easier if you have a mixer but you can do it by hand too). Beat in oil and OJ. Add mixed dry ingredients and stir until combined. Pour half of batter into pan. Add cocoa to the rest of the batter in the bowl* and mix until a uniform brown color. Pour brown batter over vanilla batter and marbelize. Bake for 30-35 minutes.
* I also like adding a drop of almond extract to the cocoa batter.

I made these blondies and they were delicious!

1 cup potato starch
3⁄4 cup oil
3⁄4 cup sugar
3⁄4 cup brown sugar
1⁄4 tsp salt
3 eggs

3⁄4 cup choc chips

Mix together, bake at 350 for 45 minutes

OP say in one of her posts she does not have an egg beater (how one can state one loves to bake but don't own an egg beater is beyond me Confused
