Unopened packages of Kosher for Pesach:
Shredded coconut
Ground walnuts
Matzah meal
Chocolate chips
Honey
For some reason, this year none of these items have use-by dates (to get me to buy them new each year? Or so they can sell the same ones each year?)
So what would you do?

Do you have freezer space for the bolded? IOW yes, I would, if I had freezer space.

Matzo meal in ziplock, no need to freeze, just in a room temperature environment.

All those items are items I use year round, so why don't you just use it up throughout the next few months as opposed to guessing if it would store nicely.
If the honey was opened already it can start crystallizing and get hard after a few months.

Because I already have more than enough opened versions of them in my chametz supplies!
The freezer suggestion is a good idea - think I’ll try it!

If honey crystallizes, you just need to heat it to make it liquid again.
The nuts may turn rancid, so freeze them.
Matza meal needs to be airtight.
Chocolate chips may discolor, but once baked they will look normal.
Coconut has stored fine for me.

I store all these items, but only unopened packages. Sugar and starch last very well. I had no problem with nuts. Oil turns rancid...but unopened is usually OK

Unopened pesach crumbs can be saved too. I've saved almost everything listed. Nuts in the freezer cuz I did have 1 bag go rancid that was not frozen. Honey I use enough of not to bother saving, and I never buy coconut, so have no reason to save it.
I was given 2 jars mayonnaise that are unopened. Think I should try saving them?

I wouldn't save any of these, as I would use them during the year. Also, they will likely go off, and I don't have freezer space. We'll buy next year on sale, just like this year.
I made a rule that I hold over only one banker box of food stuffs for next year -- dh would save everything, and we don't have the storage space.

Sure, I use some of these items, like mayo, during the year too. But when the price difference is so great, it seems kedai to save the items. Definitely items that one doesn't use. And sometimes you can get great deals on some items post-Pesach.

I would freeze everything except the honey if I had room in the freezer. Otherwise use it during the year. (I also freeze my spices from year to year, sealed).

Mayo seems risky. I find the heimish brands go off much faster than the national brands.

Depending where you are living and what climate. In Israel you surely should freeze it (and very well and tightly packed) because of bugs and to keep it fresh.
