In search of a specific tried and true vegetarian main dish/protein to make for someone.
BUT - can't include soy, gluten, nuts, eggs, or fish because of our own family allergies.
I'd make a side dish of quinoa, but would like something else. Ideas?

Vegetarian shepherd's pie? I don't have a specific recipe, I tend to just figure it out I go, but what I have done, to make a thick creamy sauce without a roux, is used pureed potatoes or cauliflower. That plus well-seasoned sauteed veggies, covered with mashed potatoes and baked. Should go well alongside quinoa.

Tempura mushroom burger

I think this is the recipe my mom uses and you can always substitute for various veggies etc if there's one your not fond of

I just took a second look at the recipe and realized that one is not my mom's. She doesn't actually put the mushroom in a burger bun.

What she does is dry portabello mushrooms caps in the oven. Dice various veggies (pepper, eggplant, stems of the mushroom, onion, really whatever you want) then saute them. Fills a mushroom cap with the veggies. Puts another cap on top uses toothpicks to hold it together. Then dunks them in a tempera batter, and bakes.

Lentils is an option.
Also, its to send to someone so food that is good cold/room temp. is preferred..

Google recipes for brown rice and lentils. There are a lot of variations; see if any appeal to you.

You could also do quinoa bowls (or let people assemble their own)

Does it have to be a protein?
When I have vegans over, I don't worry if they have a protein option

Ground mushrooms, salted and sautéed can substitute for ground meat

I've made vegan stuffed zucchini, (makshi) and stuffed it with Coarsley ground mushroom and chickpea.

Anything that you make with ground beef can be made with ground mushroom. If you need a binder you can use flax as an egg substitute.

Thanks for all the ideas. Curious about the ground mushroom idea. Do you just chop regular fresh mushrooms? Do you saute first?

Just to add to the mushroom idea...I recently used very large portabella mushroom caps and made "pizza" with them. I used tomato sauce and mozzarella but if dairy is an issue, you can leave it off and just add sauteed veggies and chickpeass, edamame, etc.for protein.

moroccan chick peas will go great over the quinoa

saute in olive oil adding
bunch of cilantro
onion(s)
head of garlic chopped
a variety of peppers: 2 red pepper, 1 roasted green pepper, 1 hot pepper of choice
tons of paprika
non-irradiated hot cayenne pepper
turmeric
sazon con culantro y achiote
black pepper
garlic powder

after it looks good add a can or 2 of chick peas with juices & let simmer

I coursley chop them first and then sauté
I'm lazy so I do it in the food processor.
Also, you can finely chop onions first and sautée.
Then, add mushrooms.
The mushrooms will give off a lot of liquid, but keep sautéing on high heat until it evaporates.

If you need a binder you can make what's called flax egg. It's flax with water that thickens up. You can google instructions on how to do this.
