I do 350 for 45 min

I bake on 375 until it looks done- the whole outside is a crispy brown

Mine always stay raw in the middle, so I'm planning to make deli pockets.
Individual ones using puff pastry squares.

Can I freeze them raw, and bake later?

Yes. I've done it more than once.
