In the summer, in a relatively small kitchen, I'm trying to lessen oven use since it really heats things up (decided not to use AC, last week even though getting pretty hot, & our chocolate chip bags were melting).
Looking to post and share stove top chicken recipes, other than fried/shnitzles. (Like shnitzle, but try to not deep fry very often)
Here's a non-exact recipe, I'm not sure the measurements, it's been a little while, but I think this is what I did:
- Yoshida citrus sauce chicken -
(Versatile, can play w/other veggies)
Ingredients:
• Chicken legs (with bones & skin)
• Yoshida sauce
• Crushed garlic
• A few white/button Mushrooms quartered (or whole or sliced)
• x1 Orange, or blood orange, sliced into rings
(Discard peel)
• Some sliced pepper, or a small zucchini sliced in circles then halved into "moons"
• Heat (olive) oil
•Brown chicken legs, so thighs & drumsticks
• Remove chicken, add a bit more oil
• careful not to overcook, add crushed garlic for a few minutes
• add mushrooms & other vegetables (not too many, not too crowd up dish) cook few more minutes
• add Yoshida sauce, maybe 1/4 cup to taste
• add chicken & simmer partially covered/lid mostly on, for around 45 minutes to hour, can use meat thermometer to check temperature, pierced thickest part of chicken not touching bone, must reach 165. Degrees F.
Great over rice, can also add thin sliced or quartered or while very small new potatoes, careful not to overcrowd pan, added when vegetables are added

The crockpot is another great way to cook without using too much heat.

It's true, but I haven't seemed to get the hang of cooking chicken in it. White meat seems to dry out, & legs, I don't have much experience with; ought to look into more, thank you for suggestion
Anybody else have stove top, or tried & true croc pot chicken recipes?

Got this from a neighbor:
Sliced onions scattered on bottom of wide pot
Drizzle with oil
Top with potato chunks and sliced carrots
Top with chicken bottoms or just drumsticks
Sprinkle garlic powder and paprika on top, thyme/rosemary if u like
Pour about 1/2 cup of orange juice over entire thing.
Cook on low flame for 2 hours, mixing a bit to keep onions from burning, add water if necessary
Comes out really soft my kids love it

Thanks so much ra_mom, I made the recipe you posted for this past Shabbos and it was really wonderful!
I'm thinking of making it again, but instead of paprika, perhaps adding a cup of Italian dressing. I'm just wondering if some ingredients won't work for long & slow croc pot cooking, might add the dressing a few hours into it.
If anybody has any variations on cooking chicken legs/thighs in the slow cooker or on the stove, would love to hear more ideas, ty in advance!
