I'm probably going to be making 3 of the YT meals milchig. While there will still be some pasta and dessert, I don't want to go overboard with carbs and I find that much more difficult to do with milchig meals than fleishig. I do not eat any fish at all. Eggs are fine, although I'm not really so into quiche and omelets don't feel nice enough for a YT meal. So I need ideas for keeping the meals festive, yet also balanced and not all noodle based.

Substitute zucchini, eggplant, or other veggies for pasta in some dishes. Like, make zucchini Alfredo or eggplant bake with sauce and cheese. And lots of salads. I like Greek salad with cubed veggies, olives, and feta cheese, in a light dressing.

And I think frittata can be very nice for yom tov, it's like a baked omelet.

I think quiche is definitely nice, especially one like mushroom leek or French onion quiche
Quinoa salad
Lentil salad
Seven layer dip
Stuffed mushrooms
Roasted vegetable platter

What is it about quiche you don't like? It can be made so many different ways, using various cheeses and vegetables, so it's usually not too hard to find combinations that can be appealing. Make it crustless to reduce carbs.
I love making large, thin slices of zucchini and butternut squash, partially baking them, then using those in place of pasta sheets in a lasagna.
Vegetable gratin. Any veggies you like. Personally I think cauliflower and broccoli are amazing this way, but everything and anything works.
Eggplant parmesan with unbreaded eggplant slices.
Blitzes seem more carb-heavy than they really are.
Creamed soups. Many good served cold/room temp.
So many choices!
