Has anyone ever tried making a blintz souffle (something like this https://www.imamother.com/foru.....22841) without the butter? Just spraying the pan with Pam?
Also has anyone tried using plain yogurt instead of sour cream?

I would definitely use Greek, not plain yogurt.
Why not try a very small batch with the subs you want to do and see how it comes out? Like cut a blintz in half, put into two muffin tins, and make a tiny batch of the rest?

U can definitely substitute plain yogurt for sour cream. Plenty recipes call for either/or.
