I like the idea of a blintz loaf, because I don’t have time to make individuals. But I tried the recipe in Spice and Spirit cookbook, and it was not successful at all. Anyone have a different recipe?

I don't have exact amounts but you can use this as a base. No need for berry additions. Flour is fine. Taste batter and adjust sweetness, extracts, to taste.
In a 2 lb loaf pan it will obviously take longer to bake than mini muffins.

You can use flour.
