Is it an honor to ask someone to be the Cohen at a pidyon Haben?
Also, how much do you pay them?

Yes, it is an honor.
You pay them the silver coins to redeem your son.
Some kohanim have their own set of silver coins that you buy off of them - it has to be a real sale at the current value of the silver.
You then use those coins to redeem your child so the kohein gets the coins back.
Our kohein did not have coins, so we bought our own coins in a Jewish silver store and he got to keep them.

It’s one of the matnas kehuna. Some people try to find the most meyuchas kohen. Others use family or friends.
They may say no. It might be inconvenient, they might not like their yichus line... don’t worry, they are uncommon enough that it shouldn’t be a problem.
