Gluten Free Shnitzel-Please Help!

I usually use a cornflake crumb that is no longer available.
What can I use that is EASY to coat gluten free shnitzel ?

Both Jeffrey Nathan and Jason make gluten free panko crumbs. Lieber's has one also. Nathan's is great; Jason's is decent; Lieber's is acceptable.

If you can't find those, but you have gluten free flour, rice flour, or potato starch, you can make chicken piccata.

I second crushed potato chips! Coat chicken with mayo, crush potato chips and mix with paprika and some pepper and then put on chicken. Then bake in the oven. Comes out great

Crushed potatoes chips is good.
Even better- crushed terra chips!! Delicious.
I also coat with mayo , chips and bake.

If you can't find GF cornflake crumbs (I know they seem to disappear periodically) you should be able to find GF cornflakes*. Just pulse carefully in food processor to desired consistency, store in a container with airtight cover (empty cocoa cans are good) in the fridge.

(*Barbara's, Erewhon, even some of the frum brands are GF)

I do love Chef Jeff's though.

I agree with chef nathans! Those really are the best
I also let them cool on a drying rack do they dont get soggy and stay crunchy
