Banana substitute

I’m making pesachdik banana muffins for someone who is highly allergic to fruits and veggies. It calls for mashed bananas but she can’t have that. Any suggestions on what else I can use? TIA!

Pesachdik cuz she can’t eat almost anything including eggs and grains... it’s made with almond butter, raw honey, vanilla...

I’m assuming applesauce not good either cuz that’s the perfect substitute

If she’s not allergic to dairy you can use Greek yogurt

Or just add oil and a little more sugar and vanilla- maybe brown sugar - that would give good flavor

Ok/ so add extra oil and vanilla... the raw honey is very sweet

That’s a good idea.... I think pareve cream cheese is made from tofu- op, can she have that?

Op, you realize that if you’re adding something totally different then you’ll have to adjust the whole recipe?

I was also thinking the aquafaba from chickpeas ...

but what about a tablespoon of flax seed soaked in 3 tbs water ...
