There is a tool called a garlic mincer or crusher. But I've found the most convenient is buying frozen crushed garlic. Each piece is one clove and it's great , no mess.

Yea! I use this too! Much easier to use than garlic press

No. Pop them out when frozen.
If you are sautéing just add it to the oil it defrosts very quickly.
In dips just blend it in
In salad dressings let it sit a bit till it completely defrosts
On meats , just rub it onto the meats and it falls apart and spreads

Don't defrost or you won't he able to get it out of the tray. Pop it out frozen and it will defrost in 2 min. It's better than the jarred garlic which has a muted flavor - the flavor is very different than fresh.
