There is a tool called a garlic mincer or crusher. But I've found the most convenient is buying frozen crushed garlic. Each piece is one clove and it's great , no mess.

I use a zester like this one:

So quick and easy, and the garlic turns almost into a paste.

I buy the jars of crushed and chopped garlic. Pricier than fresh but so much easier.

No. Pop them out when frozen.
If you are sautéing just add it to the oil it defrosts very quickly.
In dips just blend it in
In salad dressings let it sit a bit till it completely defrosts
On meats , just rub it onto the meats and it falls apart and spreads

Don't defrost or you won't he able to get it out of the tray. Pop it out frozen and it will defrost in 2 min. It's better than the jarred garlic which has a muted flavor - the flavor is very different than fresh.
