I bought some really cute rectangular clear plastic cups. I have seen some beautiful pictures of them filled with- I am not sure what..... Any recipe suggestions- aside from jello.

You can do a "pie" concept:
Layer cookie crumbs on the bottom and press down to compact into crust.
Boil one 8 oz. container of non-dairy whip in a small saucepan. Remove from heat and add 2 bars of chocolate broken into pieces. (this is the ratio I use but the quantity can be adjusted based on your crowd). Let the chocolate sit for five minutes, then stir until fully combined and mixture is glossy and smooth.
Let cool about ten minutes then pour into cups and set in the fridge for about an hour.
Top with some whipped cream and serve.

So so simple and soooo delicious!

Depends on how much you want to fill the cups. About 6, if they are almost full, I would say.

When you say bars you mean the whole 14oz. bar or a square from the bar?

The bars I use are 3 oz. Just a regular chocolate bar. So about 6 oz in total, or around a cup of chocolate chips. I add a tbsp of cocoa powder sometimes too, if I want it to set into a more fudge-like texture
