If I cut, put olive oil on and season potatoes and yams a couple of hours before putting them in the oven, would that effect the end result? If it's not an issue, should I refrigerate the prepped veggies or leave them out (before baking them)? TIA

Yams is not a problem.
White potatoes get discolored.
You can totally leave the prepped veggies out.

I would store them in a ziploc bag in the fridge.

I have been soaking the potatoes in hot water for 10 minutes then draining and drying and seasoningn, leaving out for a few hours before baking and they don’t seem to discolor, can’t explain why but that’s been my experience
