ISO baked snacks for day trips

Looking for tasty snacks to take with on day trips, that are relatively mess free.
Bonus points if young kids (6 -13yrs) can help with the baking. Extra bonus points for healthy options.

BJJ Wholeweat muffins (dont ask me why it’s called that)*

Lotus cream and cookie bars (really easy, can do it by hand)*

Cinnamon or chocolate babka from extra challah dough

Cut up fruit and melons

Chummus or avocado with crackers

Rice cakes and cheese sticks

*Let know if you want the recipe

Also, would the babkas be mezonos (if made from unsweetened challah dough)?

Yes, because it's baked with a filling.

How about cookies. A recipe that doesn’t involved chocolate chips should be overall mess-free aside from the crumbs. Biscottis with Craisins and almonds. Cupcakes or muffins - I find individual portions to be the easiest and neatest. Hmmm, well these all would make crumbs but anything baked would. If your ok with crumbs then the sky’s the limit here.

BJJ Muffins:

1 C oats
3 C whole wheat flour
2/3 C oil
1 2/3 C plain unsweetened applesauce
1 t baking soda
1 t baking powder
Pinch salt
1 2/3 C brown sugar
2 1/2 t cinnamon
2 1/2 t vanilla sugar
Chocolate chips

Mix wet ingredients. Add dry.

Pour into 30 cupcake holders.

Mix together 1/2 cup oats, 3 t sugar and cinnamon. Sprinkle over cupcakes.

Bake 350’ 20-30 mins.

Lotus Cookie Bars:

3 C flour
1 C sugar
1C oil
1 egg
1 t vanilla

In a bowl combine by hand.
Press 3/4 of the dough into a 9x13 tin.

Melt 1 C lotus spread for 15 seconds in the microwave. Spread in dough.

Crush 10 potus cookies and sprinkle on top worth the remaining dough mixture.

Bake 350’ for about 30 mins

I make the same recipe but mine has eggs and 2 and half tsp baking powder

3 eggs. Also up the baking powder. I never do the topping. I put mini chocolate chips, about 1/2 a bag, in the batter.
