I bought a few large packages of fish fillets, already brick frozen. If I only want to cook a few fillets at a time, any ideas for how to defrost a few pieces so I could freeze the rest without having to defrost and refreeze ones I won't use?
Will I have to endure freezer burn trying to get the few I want apart from the others before refreezing?

Why don’t you partially defrost them in the fridge until they are still frozen but you can cut off the pieces you want with a knife? And while you’re at it, cut the rest into the portions you’re going to need in the future, then return to the freezer.

Will partially defrosting and refreezing affect taste? Also, how long does it usually take to partially defrost salmon fillets for this purpose? I assume you partially defrost at room temperature and not in the fridge?

I sometimes run it under water to defrost just the outer layers.
