How much food? Help me find the right "formula"

Iyh I'm having guests for the chagim. Probably 8-10 adults per meal and 3 little kids.

Does this sound like enough? Feel free to advise:
Challah and dips/small salads
1 appetizer (fish dish)
(soup at night only)
1 main dish (meat or chicken)
1 kugel
1 starch
1 salad
1 cooked vegetable
Fruit or cookies for dessert

Or... If I'm having so many people, should I have more options? Like more mains or what?

I really don't want tons of leftovers

I personally always do (at least) 2 entrees when it's that many people (in case someone doesn't like something)

Yes that's a good meal plan.
If somebody doesn't like the main dish, you can always warm up some of the previous/next meal's main dish for them. Or make 1 main for each meal but set out half of one and half of another at each meal for variety.

It sounds great to me, as long as you have enough of each dish. I prefer meals where there aren’t too many different foods on the table - I get anxious about needing to try each one and then get too full!

Sounds great to me, make sure there's plenty of everything. I usually put a deli platter & salad on the table as well.

I only do one first course. Fish OR salads OR soup. Dips with the first course. Lots of challah.
2 mains + something kid friendly like chicken nuggets or mini hot dogs
One starch usually rice or potatoes.
2-3 veggies- roasted, salads, steamed.
I find that people just don't want kugel anymore for health reasons.

My bias is Yom Tov meals are ‘more special’ than Shabbat meals because there are a couple more dishes then what I might ‘normally’ serve. But that’s me - learned from my family (I guess it’s our mesora).

If you don’t want leftovers, you need to think about serving sizes for what you are preparing, not just the number of items.
